Why the dough rests two days

A short note on what actually happens to cookie dough in the fridge, and why it is worth the wait.

People ask why the cookies need two days. The short answer is that flour takes time to hydrate properly, and while it does, enzymes break starch down into simpler sugars.

That is what gives a rested dough its deeper colour and its slight caramel note. It is not patience for its own sake.

If you only have a day, bake anyway. But if you can wait, wait.
